I'm finally writing a blogpost today after almost a month!
I've been really struggling with balancing my blog, university and the million
household chores but anyhow, everybody needs a creative outlet.
This easy strawberry cheesecake is packed with amazing
delightful and refreshing flavors. It's so light and fluffy that you can't
just stop yourself from eating it everytime you open the refrigerator.
This recipe is very easy to follow; you can make these in
individual bowls, a large springform pan or any other way you like it. I
absolutely love cheesecakes! and I adore no-bake cheesecakes because they are
so easy and quick to make.
Yes, that is a crack you see on the top! It is was slightly melting down from the top because of the excessive summer heat in Kuwait :( |
All you need for the crust is a strawberry flavored swiss
roll and 4 more ingredients for the filling.
Ingredients:
For the crust:
- Nonstick spray
- 2 large strawberry swissrolls
For the cheesecake filling:
- 200 ml Thick cream
- 200 ml Whipped cream
- 250 ml Philadelphia cream cheese
- 1 pack of strawberry gelatin(85 gms)
- 1 cup boiling water
- Strawberry puree(You can make the puree out of frozen or fresh strawberries, I made mine out of frozen strawberries)
Method:
- Lightly spray the bottom of your bowls or springform pan with nonstick spray.
- Cut the swiss rolls into thin slices or a little thick, according to your choice.
- Press the swiss roll slices into the bottom of your bowls/pan and pop them in the freezer while you prepare the filling.
- In a bowl, add thick cream and cream cheese and whisk together for 2 minutes or until smooth and creamy.
- Add the strawberry puree and mix until combined. Then fold in the whipped cream.
- Now, prepare the strawberry gelatin mixture. In a bowl, add the boiling water to the strawberry gelatin powder and mix until dissolved.
- Let it cool slightly for about 3-4 minutes.
- Add the gelatin mixture to the cream cheese mixture and keep beating constantly until all the ingredients are incorporated.
- Remove the bowls/pan from the freezer and pour the strawberry cheesecake filling on top. Return the bowls/pan to the refrigerator for 4-5 hours, or overnight.
- When the cheesecake is set, top with prepared strawberry gelatin, whipped cream, strawberry sauce or any other topping of your choice.
- Serve with a big smile! :D
QUICK TIP: You can replace strawberry with any other summer fruit of your choice and make a whole new cheesecake! For example a mango, peaches or a mixed berries cheesecake. :D
