Milky-jelly vanilla cake
This Milky-jelly vanilla cake has a very rich taste which is a mixture of strawberries and vanilla!
I wanted to try making a cake that had a big fat layer of something creamy in it. So, I tried out this 'Milky-jelly' the other day which turned out to be a great success and everyone loved it at home! And then it went into my cake the next time. Not to forget, this recipe involves a lot of patience. You would have to wait for it to set.


Ingredients

For the vanilla cake:
  • 125 grams self-rising flour
  • ¼ teaspoon salt
  • 1 ½ teaspoons baking powder
  • 1 teaspoon vanilla essence
  • 150 grams caster sugar
  • 2 eggs
  • 100 grams oil
  • 115 grams milk


For the Milky-jelly:
  • 2 cups whipped cream
  • 1 pack of strawberry gelatin(85 grams)
  • 1 cup boiling water


Method

  • Preheat oven to 180 C and place a rack in the center of the oven. Grease your pan lightly using oil and line it with parchment paper.
  • In a medium bowl, sift together the flour, salt and baking powder. Set aside.
  • In a large mixing bowl, add the eggs and sugar. Beat them together using a beater at medium speed for about 5 minutes until it turns thick, creamy and pale in color. Scrape the sides. Beat in the vanilla essence. Now gradually add in your oil and continue beating at a low speed just until the oil is incorporated.
  • Next, add in a third of your flour and beat at low speed. Add half of the milk and mix. 
  •  Continue alternating the flour with the milk beginning and ending with the flour in 3 and 2 additions in the following sequence. (Flour- Milk- Flour- Milk- Flour)
  • Do not over mix. Mix just until incorporated between each addition as well as stop to scrape the sides of your bowl from time to time.
  •  Mix it one last time using a spatula to make sure everything is incorporated.
  •  Pour your batter into the prepared cake pan (8” pan) and bake in a preheated oven for 30- 45 minutes or until done. A toothpick inserted in the centre should come out clean.
  •  By the time, the cake cools in the pan, prepare the milky-jelly.
  •  In a bowl, add the boiling water to the strawberry gelatin powder and mix until dissolved.
  •  Let it cool slightly for 4-5 minutes.
  • Add the gelatin mixture to the whipped cream and keep beating constantly.
  • After the cake has cooled, Put the cake in a 9” pan and pour over the milky-jelly mixture. The cake will float on top.
  • Refrigerate the cake for it to set for at least 3-4 hours.
  • Spread whipped cream over the cake and sprinkle some jelly crystals on top just before serving.
