What if I say you can make your own ice cream at home? Yes, you can with this easiest recipe and have the same taste as one of the store-bought ice creams. The best part about making ice cream at home is that you could make your own favorite flavors.
The first time I tried making ice cream was with the left over chocolate pudding, it created a delicious chocolate ice cream. After this, I kept playing around with the list of flavors of ice creams.
This time, I made coffee and caramel ice cream. Although I hate coffee and cannot even bear the smell of it, I just loved this ice cream because... it was ICE CREAM! I mean who can hate ICE CREAM? :D
Ready to be freezed.. I added pieces of thin chocolate chips. |
The original recipe for ice cream is just a two ingredient recipe which calls for heavy whipping cream and condensed milk. Since I did not have condensed milk available in my kitchen.. I made up my own coffee flavored condensed milk. This recipe makes only one pint, double the ingredients for more. I hope you enjoy this creamy coffee and caramel ice cream as much as I did.
INGREDIENTS
For the ice cream:
- 400 ml heavy whipping cream
- 80 ml Caramel sauce
- 390 ml Coffee flavored condensed milk
- Chocolate chips(optional)
For the caramel sauce:
- 1/4 cup butter
- 1/4 cup brown sugar
- 1/4 cup heavy whipping cream
- 1 pinch salt
For the coffee flavored condensed milk:
(If you are using the store bought condensed milk, then skip this step and just mix 2 tablespoons of instant espresso powder with the condensed milk.)
- 2 eggs
- 1 cup brown sugar
- 1 teaspoon vanilla
- 2 tablespoon flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 2 tablespoons instant espresso powder
METHOD
Caramel Sauce:
- In a small saucepan over medium heat, melt the butter and sugar till the sugar is dissolved. Stir in the cream, salt and vanilla and heat, stirring till gently bubbling. Remove from the heat and let it cool, the sauce will thicken as it cools.
Coffee Flavovered Condensed Milk:
- Mix all the ingredients and cook the mixture in a double boiler until the mixture thickens. Set aside to cool.
Assembling The Ice Cream:
- Whip up the whipping cream until stiff peaks form.
- Fold in the prepared condensed milk mixture.
- Pour this ice cream mixture into an air tight container and then add drops of the caramel sauce here and there into the mixture not letting it incorporate completely.
- Sprinkle some chocolate chips. Close the container and freeze for 7-8 hours and then serve.
