Chia seed pudding is gaining popularity in the eyes of people who are trying to eat clean. But it can be hard to find in some places and can be replaced with basil seeds any day since basil seeds plump up just like chia seeds and the plus point is that it plumps up quicker and absorb the flavors of whatever its soaked in.
I flavored mine with fresh strawberries and unsweetened cocoa powder. Eating healthy doesn't mean you can't have dessert. Here's a recipe for a guilt-free dessert which is also a very healthy breakfast option.
INGREDIENTS:
For the Strawberry Pudding:
- 1 cup milk
- 3 tablespoons basil seeds
- 6-7 starawberries
- 1 teaspoon honey
For the Chocolate Pudding:
- 1 cup milk
- 3 tablespoons basil seeds
- 2 tablespoons unsweetened cocoa powder
- 1 1/2 teaspoons honey
METHOD:
- In a pot, heat the two cups of milk and honey for 2-3 minutes on low flame.
- Take out a cup of milk and blend it with strawberries in a food processor.
- Mix in 2 tablespoons of unsweetened cocoa powder in the remaining milk, while it is warm so the cocoa powder can dissolve well.
- In two separate mixing bowls, add 3 tablespoons of basil seeds in each and pour the strawberries and chocolate flavored milk in the two separate bowls stirring continuously. Let stand for 2 minutes, stir again.
- Pour the pudding in serving glasses/bowls, add oats granola(optional) and refrigerate it for 4 hours, overnight or eat it straight away! :)
