The day I was leaving home(Kuwait) to get back to the busy University life in Lahore. My mom was all sad and in tears so I made this pasta for my Pasta-lover mom to cheer her up a little :) and she absolutely loved it and almost ate all of it. :)
How I mentioned in my last post that she is the judge in the house whose comments I wait for the most and it makes me so happy when she loves the food I make. If she loved it, it has to go up on my blog! YES, for sure.
I'm now back to University, with a new semester and everywhere I go I'm just like "HELP! I'm homesick." :( I miss my mom the most and as they say 'home is where mom is' *sigh*. Okay, before I get too emotional let me get to the recipe.
So here it is, I share with you my mom's new favorite pasta and I'm sure everyone is going to love it, if she did. :)
Ingredients
- 250 grams Fusilli pasta
- 3 tablespoons Olive oil
- Salt (According to taste)
- 3 Medium size Tomatoes
- 3/4 cup cream
- 1 teaspoon crushed red chili
- 4 tablespoons olive oil
- 5-6 garlic cloves (chopped, finely)
- 1 tablespoon ginger paste
- 2 green chilis (chopped, finely)
- Salt and Black pepper (According to taste)
- 250 grams ground mutton
- 1/2 red onion(chopped)
- 1/4 cup coriander(chopped)
- 1 egg
- 1/2 cup bread crumbs
- Salt and Black pepper (According to taste)
- Oil for frying
- Fill a large pot with water, enough to boil the pasta. Bring to a boil. Add in the pasta, olive oil and salt. Let it boil until the pasta is cooked through.
- Save one cup of the water in which the pasta was being cooked for the sauce and then empty the entire pot of pasta into a strainer, let it cool.
- To prepare the sauce, first blend the tomatoes in a blender
- Add the blended tomatoes in a large skillet and place on the stove to cook and turn down the stove slightly.
- Add in the crushed red chilli, salt and pepper and let it cook for around 20 minutes or until it changes color.
- After the mixture changes color, add in cream and stir.
- Remove from the stove.
- In a large bowl, combine all the ingredients for the meatballs.
- Using your hands roll the meat into meatballs and place on a tray.
- Heat the oil in a large frying pan and fry the meat balls for about 3 minutes on each side. Until meat balls are golden brown.
- Drain on paper towel.
- In another pan, add olive oil, garlic, ginger and green chilis and sauté these ingredients.
- Add these sautéed ingredients in the sauce and mix.
- Add the fried meatballs in the sauce.
- Spread the sauce over the pasta.
- Garnish with fresh chopped parsley and Parmesan cheese and serve.
